Olvero EVOO Pearls transform our Intense Fruity Picual into delicate spheres that gently burst in the mouth, releasing the full flavour and intensity of the olive oil.

Made with our organic Picual extra virgin olive oil, produced from olives grown in our family’s groves in Arjonilla, Jaén, they capture the fresh, intense and nuanced character of our EVOO in an entirely different format.

Their delicate texture and elegant presentation make just a few pearls the perfect finishing touch to a dish. Ideal with appetisers, cheeses, salads, vegetables, fish, meat, soups and tapas, they add flavour and contrast without overpowering the other ingredients.

A simple, contemporary way to bring our Picual to the table: the same olive oil, a different experience.

Preparation

Each campaign begins with an early harvest, when the olive retains its maximum aromatic and antioxidant richness.

The extraction is carried out cold, using a two-phase continuous system without adding water, preserving the natural compounds of the oil. Afterwards, the oil is decanted, filtered, and stored in tanks protected from light and oxygen until bottling.

Every step is designed so that the oil reaches your table exactly as it left the mill.

Intense green fruitiness with notes of freshly cut grass, tomato plant and artichoke, accompanied by delicate hints of green banana, fennel and thyme.

Taste

Fresh and balanced entry, with an elegant bitterness and pungency, typical of an early harvest. Its finish is long, clean and persistent.
