Ingredients
For 2–4 people
- 1 head of broccoli
- 2 cloves of garlic
- 1 tablespoon of lemon juice
- 2–3 tablespoons of Olvero EVOO
- 2 tablespoons of Parmigiano Reggiano cheese
- ½ teaspoon of salt
- ¼ cup of sliced or chopped almonds
- Chili (optional)
Preparation
- In a mortar, crush the garlic, salt, and chili until a paste forms. Add the olive oil and mix well.
- Cut the broccoli into long florets (vertical cut for better caramelization).
- Mix the broccoli with the oil and spread it on a baking sheet without crowding.
- Bake at 200°C (390°F) for 10–15 minutes.
- Add the almonds and bake for 5 more minutes, until golden.
- Remove from the oven, add the lemon juice and Parmesan.
- Finish with a drizzle of raw EVOO.
